Description

This refreshing Watermelon Smoothie combines frozen watermelon cubes, strawberries, creamy coconut milk, and Greek yogurt for a delightful and hydrating treat. Sweetened naturally with honey and brightened with optional lime juice, it’s perfect for a quick, healthy snack or breakfast on a warm day.

Ingredients

Scale

Main Ingredients

  • 1 mini seedless watermelon, or 2 ½ cups frozen watermelon cubes
  • ½ cup frozen strawberries
  • 1 cup canned light coconut milk
  • ½ cup plain whole milk or reduced-fat Greek yogurt
  • 1 tablespoon honey
  • 1 ½ teaspoons lime juice (optional)

Instructions

  1. Prepare Watermelon Cubes: If using a whole seedless watermelon, cut it into quarters. Score the flesh with 1-inch parallel cuts both horizontally and vertically to create cubes, then slice carefully to separate the cubes from the rind.
  2. Freeze Watermelon: Spread the watermelon cubes in a single layer on a baking sheet lined with parchment paper or a silicone mat. Freeze until completely solid, which will take at least 3 hours or ideally overnight.
  3. Combine Ingredients: Place 2 ½ cups of the frozen watermelon cubes, frozen strawberries, light coconut milk, Greek yogurt, honey, and optional lime juice into a blender.
  4. Blend Smooth: Blend the mixture until smooth and creamy, approximately 1 minute. Pause and stir the ingredients if necessary to help uniform blending.
  5. Serve Immediately: Pour the smoothie into two glasses and enjoy right away for the best texture and flavor.
  6. Store Frozen Watermelon: Keep any leftover frozen watermelon cubes in freezer bags for up to 2 months for future use.

Notes

  • For a dairy-free version, substitute the Greek yogurt with additional coconut milk or a plant-based yogurt.
  • Adjust the amount of honey based on the sweetness of the watermelon and your taste preference.
  • If fresh watermelon is not in season, pre-frozen watermelon cubes can be used.
  • Adding lime juice helps to enhance the flavors but can be omitted if desired.
  • Ensure the watermelon cubes are fully frozen to achieve the best smoothie texture.
