Ingredients
Scale
Chicken Mixture
- 500g chicken mince
- 1 tbsp fajita seasoning (or blend of chili powder, smoked paprika, Cajun spice)
- 1 tbsp olive oil (or vegetable oil)
- 1 red onion, finely diced
Nachos Base
- 1 large bag tortilla chips
- 2 cups shredded cheddar cheese
Toppings
- 1 avocado, chopped
- 2 tomatoes, diced
- 1 jalapeño, sliced
- 2 green onions, chopped
- 1/4 cup coriander (cilantro), chopped
Condiments
- 1/2 cup sour cream or light crème fraîche
- 1/2 cup salsa
Instructions
- Preheat Oven: Preheat your oven to 180 °C (350 °F) to prepare for melting the cheese over the nachos.
- Sauté Onions: Heat the olive oil in a pan over medium heat, then add the finely diced red onion and sauté for about 5 minutes until softened and fragrant.
- Cook Chicken: Add the chicken mince to the pan and cook for 8 to 10 minutes, breaking it apart as it cooks until it is fully browned and cooked through.
- Season Chicken: Stir in the fajita seasoning, mixing well, and cook for another minute to infuse the chicken with flavor. Then remove the pan from heat.
- Arrange Chips: Spread the tortilla chips evenly on a large skillet or baking sheet, creating a base layer for the nachos.
- Layer Chicken and Cheese: Evenly distribute the cooked, seasoned chicken mince over the tortilla chips, then generously sprinkle shredded cheddar cheese on top.
- Bake Nachos: Place the skillet or baking sheet in the preheated oven and bake for approximately 10 minutes, or until the cheese is melted, bubbly, and golden.
- Add Fresh Toppings: Remove the nachos from the oven and immediately top with chopped avocado, diced tomatoes, sliced jalapeño, chopped green onions, and fresh coriander.
- Serve with Condiments: Serve the loaded nachos immediately, accompanied by sour cream or light crème fraîche and salsa on the side for dipping or drizzling.
Notes
- For extra heat, add more jalapeño slices or a drizzle of hot sauce.
- You can substitute chicken mince with ground beef or turkey if preferred.
- Use low-fat cheese and light sour cream for a lighter version.
- If you don’t have fajita seasoning, mix equal parts chili powder, smoked paprika, and Cajun spice as a substitute.
- Serve immediately to enjoy the nachos while the cheese is warm and gooey.
