Description

These Shrimp Taco Bites are a flavorful and colorful appetizer featuring marinated, pan-seared shrimp served on scoop-style tortilla chips with creamy sour cream, fresh avocado, tangy salsa, and optional cilantro and lime for a refreshing finish. Perfect for parties or as a light snack, they offer a delightful blend of spicy, citrusy, and savory flavors in every bite.

Ingredients

Scale

Shrimp Marinade

  • 24 large raw shrimp (peeled, deveined, and tails-off)
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • Juice of 2 small limes
  • Zest of one lime
  • 3 cloves garlic (minced)
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Assembly

  • 24 scoop-style tortilla chips
  • 1 container (16 ounces) sour cream
  • 1 large ripe avocado (diced or mashed)
  • 1 cup salsa (or Pico de Gallo)
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Prepare Shrimp Marinade: In a large bowl, combine the olive oil, honey, lime juice, lime zest, minced garlic, chili powder, red pepper flakes, kosher salt, and black pepper to create the marinade. Add the peeled and deveined shrimp to the bowl and toss well to coat evenly. Cover and refrigerate for 1 hour to allow the shrimp to absorb the vibrant flavors.
  2. Cook the Shrimp: Heat a nonstick skillet over medium-high heat. Add the shrimp along with half of the marinade to the skillet. Discard the remaining marinade to avoid cross-contamination. Sear the shrimp for 2 to 3 minutes on each side, or until they turn pink, curl up, and are cooked through. Take care not to overcook, as shrimp can become tough. Remove the shrimp from heat and let them rest briefly.
  3. Assemble the Taco Bites: On each scoop-style tortilla chip, spread about 1 teaspoon of sour cream followed by 1 teaspoon of diced or mashed avocado. Place one cooked shrimp on top of each chip. Spoon a small amount of salsa or Pico de Gallo over the shrimp. Garnish with fresh cilantro leaves and a squeeze of lime juice, if desired, to enhance brightness and freshness.
  4. Serve Immediately: These Shrimp Taco Bites are best enjoyed fresh while the tortilla chips remain crisp and the shrimp are still warm. Serve with additional lime wedges on the side for extra zest. Enjoy as an appetizer or light snack perfect for gatherings.

Notes

  • Marinating the shrimp for a full hour enhances the depth of flavor but can be reduced to 30 minutes if short on time.
  • Use scoop-style tortilla chips to easily hold the toppings without spilling.
  • For a spicier bite, add extra red pepper flakes to the marinade or serve with a hot salsa variant.
  • These bites are best served immediately to avoid soggy chips.
  • Leftover cooked shrimp can be refrigerated for up to 2 days but should be reheated gently.
