Description

A flavorful roasted turkey breast infused with a garlic herb butter blend, delivering juicy, tender meat with a crispy, aromatic skin perfect for a comforting family meal or festive occasion.

Ingredients

Scale

Turkey

  • 1 bone-in turkey breast (4-6 pounds)

Garlic Herb Butter

  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of one lemon (optional, for a citrusy kick)

Instructions

  1. Thawing the Turkey: If your turkey breast is frozen, thaw it in the refrigerator. Plan for about 24 hours of thawing time for every 4-5 pounds to ensure it’s fully defrosted before cooking.
  2. Preheating the Oven: Preheat your oven to 375°F (190°C) to prepare for even roasting.
  3. Making Garlic Herb Butter: In a bowl, combine the softened butter with minced garlic, rosemary, thyme, sage, salt, black pepper, and lemon zest if using. Mix thoroughly to blend all the aromatic herbs and seasonings into the butter.
  4. Preparing the Turkey: Remove the turkey breast from its packaging and pat it dry thoroughly with paper towels to ensure a crispy skin.
  5. Loosening the Skin: Carefully loosen the skin of the turkey breast using your fingers without tearing it, creating space for the herb butter.
  6. Applying Butter Under the Skin: Spread about two-thirds of the garlic herb butter mixture evenly under the loosened skin to infuse the meat with flavor.
  7. Applying Butter on the Outside: Rub the remaining garlic herb butter all over the outside of the turkey breast for extra flavor and moisture.
  8. Securing the Turkey: If desired, tie the turkey breast with kitchen twine to promote even cooking and maintain shape.
  9. Placing in Roasting Pan: Place the prepared turkey breast skin side up in a roasting pan to allow the skin to crisp while roasting.
  10. Roasting: Roast the turkey breast in the preheated oven for approximately 20 minutes per pound, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  11. Basting: Every 30 minutes during roasting, baste the turkey with its own juices to keep it moist and help the skin develop a golden, crisp finish.
  12. Resting: After roasting, remove the turkey from the oven and let it rest for 15-20 minutes. Resting allows the juices to redistribute, ensuring moist slices.
  13. Carving and Serving: Carve the turkey breast into thin slices against the grain and serve with your favorite side dishes for a delightful meal.

Notes

  • Thaw turkey breast in the refrigerator, not at room temperature, for food safety.
  • Using kitchen twine helps the turkey cook evenly but is optional.
  • Resting the meat before carving is essential for juicy cuts.
  • Lemon zest adds brightness but can be omitted if preferred.
  • Use a meat thermometer to ensure safe internal temperature of 165°F (74°C).
