Description

Rainbow Rice Krispie Treats are a colorful and fun twist on classic marshmallow cereal bars. These vibrant layered treats are made by melting butter and marshmallows, mixing with puffed rice cereal dyed with gel food coloring, and building multiple colorful layers in a pan. Perfect for parties or a cheerful snack, they are easy to prepare with no baking required.

Ingredients

Scale

Base Ingredients

  • 1 tbsp Salted Butter (can use unsalted if preferred)
  • 70 grams Mini Marshmallows
  • 35 grams Puffed Rice Cereal (can substitute brown rice crisps for gluten-free)

Coloring

  • 8 drops Gel Food Coloring (high-quality colors like Chefmaster recommended, various colors for layering: purple, blue, green, yellow, orange, red)

Instructions

  1. Prepare the Pan: Line an 8×8-inch square baking tin with parchment paper arranged criss-crossed to facilitate easy removal, then lightly grease it with nonstick spray.
  2. Melt Butter and Marshmallows: In a medium saucepan over low heat, melt 1 tablespoon of butter. Add 70 grams of mini marshmallows and stir continuously until completely melted and smooth.
  3. Add Color and Cereal: Remove the saucepan from heat and add 8 drops of one chosen gel food coloring (starting with purple). Stir in 35 grams of puffed rice cereal gently until well combined.
  4. Layer Treatments: Pour the colored marshmallow and cereal mixture into the prepared pan and press down firmly using damp fingers to create an even layer. Repeat the melting, coloring, and mixing process using blue, green, yellow, orange, and finally red gel colors, layering each mixture on top of the previous one, pressing each layer down firmly.
  5. Cooling: Allow the layered treat to cool completely at room temperature for 30 to 60 minutes until all layers are set and firm.
  6. Slice the Treats: Lift the rainbow slab out of the pan using the parchment paper liner. Transfer to a cutting board and cut into squares of desired size.

Notes

  • You can substitute brown rice crisps for the puffed rice cereal to make this gluten-free.
  • Use gel food coloring instead of liquid to avoid altering the texture of the marshmallow mixture.
  • Press layers firmly with damp fingers to ensure compact, cohesive treats.
  • The mini marshmallows melt faster, helping to maintain smooth layering.
  • Store treats in an airtight container to keep them fresh for several days.
