Scale
Main Ingredients
- 6 cups Rice Krispies Cereal
- 1 cup Canned Pumpkin (drained of excess moisture)
- 4 tablespoons Butter
- 10-12 ounces Marshmallows
- 1-2 teaspoons Pumpkin Pie Spice
- 1 teaspoon Vanilla Extract
- 1 cup White Chocolate Chips
- 1 drop Orange Gel Food Coloring (optional)
Instructions
- Prepare the pan: Butter a 9×9 inch square pan generously to ensure easy removal of the treats once set. Set it aside while you prepare the mixture.
- Drain the pumpkin: Spread canned pumpkin on paper towels and let it sit for 5-10 minutes to draw out excess moisture for optimal texture in the treats.
- Melt butter and combine pumpkin: In a saucepan over medium heat, melt 4 tablespoons of butter. Stir in the drained pumpkin until the mixture is well combined and creamy.
- Add marshmallows and vanilla: Toss in 10-12 ounces of marshmallows along with 1 teaspoon of vanilla extract. Stir continuously until everything is fully melted and blended into a smooth, gooey mixture.
- Add color (optional): If desired, mix in a few drops of orange gel food coloring until the color is evenly distributed throughout the marshmallow mixture.
- Mix in Rice Krispies: Remove the pan from heat and fold in 6 cups of Rice Krispies cereal, stirring until all the cereal is coated evenly with the marshmallow mixture.
- Press into pan and cool: Firmly press the mixture into the buttered 9×9 inch pan, spreading it out evenly. Allow it to cool at room temperature for about 30 minutes to set firmly.
- Melt and drizzle white chocolate: While the treats cool, melt 1 cup of white chocolate chips in a double boiler. Once the treats have set, drizzle the melted white chocolate evenly over the top.
- Cut and serve: Allow the white chocolate to set, then cut the treats into squares or desired shapes. Serve and enjoy your festive fall treats!
