Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Prepare Meatloaf Mixture: In a large bowl, combine the ground chicken, Parmesan cheese, flour, eggs, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined to maintain a tender texture, avoiding overmixing.
- Shape Meatloaves: Divide the mixture evenly into 8 portions. Shape each portion into a small loaf and arrange them on the prepared baking sheet, spacing them a few inches apart to allow even cooking.
- Bake Initial Meatloaves: Place the baking sheet in the preheated oven and bake for 25 minutes, allowing the meatloaves to cook through and start setting.
- Add Toppings: Remove the meatloaves from the oven. Spoon a generous amount of marinara sauce over each meatloaf, then sprinkle approximately 2 tablespoons of freshly grated mozzarella cheese on top of each one.
- Final Bake & Melt Cheese: Return the meatloaves to the oven and bake for another 5 minutes or until the cheese has melted and the internal temperature of the meatloaves reaches 165°F (74°C) to ensure they are fully cooked.
