Instructions

  1. Marinate the Chicken: Rubbing olive oil, salt, and black pepper on and under the skin as well as inside the cavity of the whole chicken. Let the chicken marinate at least 30 minutes or ideally overnight in the refrigerator to absorb the flavors.
  2. Prepare the Lemon Sauce: Slice the lemons and optionally squeeze some fresh lemon juice into the marinade to enhance the citrus flavor. Set the lemon slices aside for roasting.
  3. Preheat the Oven: Heat your oven to 425°F (220°C) to ensure the chicken roasts evenly and develops a golden, crispy skin.
  4. Arrange and Roast: Place the lemon slices in a roasting pan and put the marinated whole chicken on top. Optionally add sliced onions, carrots, or herbs around the chicken. Roast for approximately 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C), ensuring it is safely cooked and juicy.
