Ingredients
Scale
Chicken
- 1 ½ pounds boneless, skinless chicken breasts (about 4 pieces)
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
Sauce & Garnish
- 3 tablespoons olive oil
- ¾ cup dry white wine or chicken stock
- 1 tablespoon all-purpose flour
- ¼ cup Dijon mustard
- 3 tablespoons unsalted butter
- 3 tablespoons lemon juice
- 1 lemon, sliced (optional, for garnish)
- 2 teaspoons roughly chopped fresh parsley
Serving
- Cooked pasta or rice, for serving
Instructions
- Sear Chicken: Season the chicken breasts generously with kosher salt and freshly cracked black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear them on one side for about 5 minutes without moving, to develop a golden crust.
- Flip and Cook: Flip the chicken breasts and cook the other side for another 4-5 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
- Make Sauce: In the same skillet, reduce the heat to medium and whisk together the flour, Dijon mustard, unsalted butter, and lemon juice. Stir constantly to combine and cook until the mixture begins to thicken.
- Deglaze Pan: Pour in the white wine or chicken stock to deglaze the pan, scraping up any browned bits stuck to the bottom to add extra flavor to the sauce.
- Simmer with Chicken: Return the chicken breasts and any accumulated juices to the skillet. Add lemon slices if using. Let everything simmer together for 3-4 minutes, allowing the sauce to thicken further and the chicken to become tender and infused with the lemon Dijon flavors.
- Season and Serve: Taste the sauce and season with additional salt and pepper if necessary. Serve the chicken over cooked pasta or rice and garnish with chopped fresh parsley for a fresh pop of color and flavor.
Notes
- Use dry white wine for a more flavorful sauce or substitute chicken stock if you prefer a non-alcoholic option.
- Letting the chicken sear undisturbed helps it develop a nice golden crust.
- Adjust lemon juice amount according to your taste preference for more or less tartness.
- Pairing with pasta or rice soaks up the delicious sauce perfectly.
- Cooking times may vary depending on the thickness of your chicken breasts.
