Description

These Irresistible Caramelized Onion and Goat Cheese Tarts offer a perfect balance of sweet, savory, and tangy flavors. Featuring a flaky puff pastry base topped with slowly caramelized onions, creamy goat cheese, and fragrant fresh thyme, these tarts make an elegant appetizer or light meal that’s simple to prepare and sure to impress.

Ingredients

Scale

Puff Pastry

  • 1 sheet puff pastry

Caramelized Onions

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • Salt and pepper to taste

Topping

  • 4 ounces goat cheese, crumbled
  • 1 tablespoon fresh thyme leaves

Finishing

  • 1 egg, beaten (for brushing the pastry border)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the ideal temperature for baking the tarts.
  2. Caramelize the Onions: Heat olive oil in a large skillet over medium heat. Add thinly sliced onions and cook for about 20 minutes, stirring occasionally to prevent sticking, until the onions become soft and golden brown.
  3. Add Sugar and Seasoning: Sprinkle the sugar, salt, and pepper over the onions, then continue cooking for another 5 minutes to enhance the caramelization and flavor.
  4. Prepare the Puff Pastry: Roll out the puff pastry sheet on a baking sheet. Using a knife, gently score a border around the edges of the pastry without cutting all the way through to create a raised edge when baked.
  5. Assemble the Tart: Spread the caramelized onions evenly over the unscored center of the puff pastry, leaving the border clear. Then sprinkle the crumbled goat cheese and fresh thyme leaves evenly on top of the onions.
  6. Brush the Border: Using a pastry brush, coat the scored border of the puff pastry with the beaten egg. This will give the crust a beautiful golden color when baked.
  7. Bake the Tart: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the pastry is puffed, golden, and flaky.
  8. Serve: Remove from oven, let cool slightly, then slice and serve warm or at room temperature.

Notes

  • For a deeper onion flavor, use a mix of red and yellow onions.
  • The goat cheese can be substituted with feta or cream cheese for a different texture and taste.
  • Fresh thyme can be replaced with rosemary or sage if preferred.
  • Make sure to score the pastry border carefully to prevent the filling from spilling out during baking.
  • Allow the caramelized onions to cool slightly before spreading to avoid making the pastry soggy.
