Description

Enjoy the vibrant and flavorful Honey Lime Grilled Corn, a perfect summer side dish that combines sweet, spicy, and tangy elements. Fresh corn is grilled to a smoky char and slathered with a luscious honey lime butter infused with jalapeño, garlic, and herbs for a deliciously easy outdoor treat.

Ingredients

Scale

Corn and Grill Preparation

  • 4 ears corn, shucked
  • Vegetable oil (for brushing grill)

Honey Lime Butter

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 jalapeño, seeded and finely chopped
  • 1 clove garlic, minced
  • 2 Tbsp. chopped fresh cilantro
  • 2 Tbsp. honey
  • 1 Tbsp. chopped fresh oregano
  • 1 tsp. finely grated lime zest
  • 2 tsp. fresh lime juice
  • 1/2 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper

Instructions

  1. Preheat and Prepare Grill: Preheat your grill to medium-high heat. Brush the grill grate lightly with vegetable oil to create a non-stick surface, which will help in grilling the corn evenly without it sticking.
  2. Shuck the Corn: Remove all the husks and silk from the 4 ears of corn, ensuring they are clean and ready for grilling.
  3. Grill the Corn: Place the corn directly on the hot grill. Grill for 10 to 12 minutes, turning occasionally to achieve a nice char and even cooking, until the corn is tender and golden with slight grill marks.
  4. Prepare Honey Lime Butter: While the corn is grilling, combine the softened butter with chopped jalapeño, minced garlic, cilantro, honey, oregano, lime zest, lime juice, kosher salt, and black pepper in a bowl. Whisk thoroughly until all ingredients are well incorporated into a smooth, flavorful butter mixture.
  5. Apply Butter and Serve: Once the corn is fully grilled and removed from the heat, immediately slather each ear generously with the honey lime butter while still warm, allowing the flavors to melt into the corn. Serve hot for the best taste experience.

Notes

  • For a milder dish, omit the jalapeño or reduce the amount.
  • If fresh oregano is unavailable, substitute with fresh thyme or basil.
  • Brush the grill well to prevent sticking and maintain the corn’s integrity.
  • Use fresh lime juice for optimal flavor; bottled lime juice may affect the brightness.
  • Leftover honey lime butter can be refrigerated and used for bread or vegetable dishes.
