Instructions

  2. Prepare the Sauce: While the noodles are cooking, combine 1/4 cup low sodium soy sauce, 2 tablespoons honey, 2 tablespoons sesame oil, 4 cloves minced garlic, and 1/2 teaspoon red pepper flakes in a small bowl. Whisk them together until well blended.
  3. Toss Noodles with Sauce and Vegetables: Pour the prepared sauce over the drained noodles and toss to ensure the noodles are evenly coated. Add 1 cup bagged coleslaw mix, 1/2 cup shredded carrots, and 1/3 cup chopped cilantro to the noodle mixture, stirring to combine thoroughly. Gently fold in half of the chopped cilantro, green onions, and honey roasted peanuts, reserving the rest for garnish. Add 2 cups shredded rotisserie chicken at this point if using, and mix gently.
