Shrimp Mixture
- 8 pieces Large Shrimp (uncooked, peeled, and deveined)
- ½ inch Ginger (grated)
- 2 cloves Garlic (finely chopped)
- ½ tsp Chinese Cooking Wine (Shaoxing Wine)
- 1 tsp Soy Sauce
Other Ingredients
- 2 slices White Bread
- 2 tbsp Sesame Seeds
- ½ cup Neutral Frying Oil (e.g., Canola or Vegetable Oil)
Instructions
- Prepare Shrimp Paste: Peel and devein shrimp if not already done, removing tails. Place shrimp, grated ginger, finely chopped garlic, Chinese cooking wine, and soy sauce in a food processor and blend until finely mixed. Alternatively, chop shrimp finely by hand and combine with other ingredients in a bowl to form a paste.
- Prepare Bread: Remove crusts from white bread slices. Generously spread the shrimp mixture evenly over one side of each bread slice for maximum flavor coverage.
- Coat with Sesame Seeds: Spread sesame seeds on a flat surface. Press the shrimp-coated side of each bread slice down firmly into the seeds, ensuring a full, even coating for added crunch.
- Heat Oil: Pour neutral frying oil into a large frying pan and heat over medium-high heat until hot. Test readiness by dipping a piece of bread crust into the oil; it should bubble and brown immediately.
- Fry Shrimp Toast: Carefully place the bread, shrimp and sesame seed side down, into the hot oil. Fry for about 2 minutes until golden brown and crispy. Flip the toast and fry the bread side for another 2 minutes until nicely toasted and golden.
- Drain and Serve: Remove the shrimp toast from the oil and place on a wire rack or paper towels to drain excess oil. Cut each slice into 4 triangles. Serve warm, ideally with sweet chili sauce for dipping.
