Ingredients
Scale
Meat
- 1 lb (450 g) Italian sausage, casings removed
Vegetables & Herbs
- 4 medium Yukon gold potatoes, diced (about 600 g)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups fresh spinach, chopped (about 60 g)
Liquids & Seasoning
- 4 cups (960 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 g) Italian seasoning
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Gather Ingredients: Collect all your ingredients so everything is ready to go before you start cooking.
- Brown the Sausage: Heat olive oil in a large pot over medium heat, add the Italian sausage and cook, breaking it apart, until browned and cooked through.
- Set Sausage Aside: Remove the browned sausage from the pot and set it aside, keeping the rendered fat in the pot for flavor.
- Sauté Aromatics: Add the chopped onion to the pot and cook for 3-4 minutes until translucent. Then add minced garlic and sauté for an additional minute to release its aroma.
- Cook Potatoes: Add diced Yukon gold potatoes and chicken broth to the pot, bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until the potatoes are tender and cooked through.
- Combine Ingredients: Return the cooked sausage to the pot and stir in the heavy cream, chopped spinach, Italian seasoning, salt, and black pepper. Add red pepper flakes if desired for a mild kick.
- Simmer Soup: Let the soup simmer for another 5-10 minutes, stirring occasionally, allowing the flavors to meld together and the spinach to wilt.
- Serve: Ladle the soup into bowls and garnish with extra fresh spinach or some grated Parmesan cheese. Enjoy with a slice of crusty bread for a perfect meal.
Notes
- You can substitute Italian sausage with turkey sausage for a lighter option.
- For a thicker soup, mash a few potatoes in the pot before adding the sausage back in.
- Add Parmesan cheese or croutons as a garnish for extra flavor and texture.
- Red pepper flakes are optional but add a nice subtle heat if you like spice.
- Leftovers can be stored in the fridge for up to 3 days or frozen for up to 1 month.
