Oatmeal and Toppings
- 1 tsp olive oil
- 1 small apple, diced
- 1/4 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup rolled oats
- 1 cup almond milk
- 1 tbsp almond butter
- 1 tbsp maple syrup
Instructions
- Heat Olive Oil: Warm 1 teaspoon of olive oil in a small pot over medium heat to prepare for sautéing the apples.
- Sauté Apples: Add the diced small apple, 1/4 teaspoon of cinnamon, and 1 teaspoon of vanilla extract to the pot. Cook and stir for about 3 minutes until the apples begin to soften.
- Set Aside Apples for Topping: Remove a few pieces of the sautéed apples from the pot and set them aside to use as a topping later.
- Add Oats and Almond Milk: To the pot with the remaining apples, add 1/2 cup of rolled oats and 1 cup of almond milk. Bring the mixture to a boil over medium heat.
- Simmer Oatmeal: Reduce the heat and let the oatmeal simmer for 10 to 15 minutes, stirring occasionally. Cook until the oats are tender and most of the liquid has been absorbed.
- Assemble and Serve: Transfer the cooked oatmeal to a bowl. Top with the reserved sautéed apples, 1 tablespoon of almond butter, and 1 tablespoon of maple syrup. Serve warm and enjoy your cinnamon apple oatmeal bowl.

- For added texture, consider topping the bowl with nuts or seeds.
- This oatmeal is best enjoyed immediately but can be stored in the refrigerator for up to 2 days and reheated gently.
- Using fresh apples is recommended, but frozen diced apples can be used in a pinch.
