Ingredients
Scale
Caramel Mixture
- 1 cup caramel candies
- 2 tablespoons heavy cream
Nuts
- 2 cups mixed nuts
Chocolate Topping
- 1 cup chocolate chips
Instructions
- Melt Caramel: In a saucepan over low heat, melt the caramel candies together with the heavy cream, stirring continuously until the mixture becomes smooth and creamy.
- Combine Nuts: Remove the caramel mixture from heat and stir in the mixed nuts until they are fully coated with the caramel.
- Form Clusters: Using a spoon, drop small spoonfuls of the caramel-nut mixture onto a parchment-lined baking sheet, spacing them slightly apart.
- Melt Chocolate: In a microwave-safe bowl, gently melt the chocolate chips in short intervals, stirring in between until they are smooth.
- Drizzle and Chill: Drizzle the melted chocolate over the caramel nut clusters. Then, refrigerate the clusters until the chocolate topping sets completely, approximately 30 minutes.
Notes
- Use a variety of mixed nuts such as almonds, pecans, walnuts, and cashews for the best flavor and texture.
- If caramel candies are hard to melt, chop them into smaller pieces to speed up the process.
- The clusters can be stored in an airtight container in the refrigerator for up to one week.
- To speed up chocolate melting, microwave in 15-second intervals to prevent burning.
- For a gluten-free version, ensure the caramel candies are gluten-free certified.
