Ingredients
Scale
Filling
- 10 ounces cooked, shredded chicken breast (about 2 cups)
- 4 ounces cream cheese (softened)
- 1 tablespoon salted butter (softened)
- 1/2 tablespoon dried chives
- 1/2 tablespoon dried minced onion
- Salt and pepper (to taste)
Dough and Coating
- 1 can (8 ounces) refrigerated Pillsbury crescent roll dough
- 1/4 cup salted butter (melted)
- 1/2 cup Italian breadcrumbs
Gravy
- 1 can (10 ounces) cream of chicken soup
- 1 packet (1 ounce) chicken gravy mix
- 3/4 cup water
Instructions
- Preheat Oven: Preheat the oven to 350 degrees F and lightly grease a baking sheet with non-stick spray to prepare for baking.
- Prepare Filling: In a bowl, combine the softened cream cheese and 1 tablespoon of softened butter until smooth. Add the cooked shredded chicken, dried chives, dried minced onion, and season well with salt and pepper. Mix thoroughly to incorporate all ingredients.
- Prepare Dough: Unroll the crescent roll dough and press two triangles together firmly to create one rectangle, sealing the perforations well to prevent filling from leaking. Repeat to create four rectangles total.
- Assemble Pillows: Evenly divide the chicken mixture among the four dough rectangles, placing the filling in the center of each. Fold each corner over the filling to cover completely and press edges securely. Shape each into a ball.
- Coat Pillows: Dip each formed chicken pillow into the melted butter, then roll and coat evenly with Italian breadcrumbs. Shake off any excess breadcrumbs and place the coated pillows on the prepared baking sheet.
- Bake: Bake in the preheated oven for 22 to 25 minutes, or until the chicken pillows are golden brown and cooked through.
- Prepare Gravy: While baking, in a small saucepan, combine the cream of chicken soup, chicken gravy mix, and water. Bring to a boil, then reduce heat to low and simmer until the chicken pillows are ready.
- Serve: Remove the chicken pillows from the oven and pour the warm chicken gravy over them. Serve immediately and enjoy this comforting meal.
Notes
- Make sure to press the dough perforations tightly to prevent filling from oozing out during baking.
- Use freshly grated Italian breadcrumbs if you prefer a crispier coating.
- The chicken gravy can be made ahead and warmed before serving to save time.
- Adjust seasoning for the filling according to your taste preference.
- For a lower fat option, consider using reduced-fat cream cheese and butter substitutes.
