Salmon and Vegetables

  • 4 x 5-8 oz (150-180g) salmon fillets, skin on or off
  • 2 bunches asparagus
  • 1 bunch broccolini
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Glaze

  • 1 tbsp Dijon mustard
  • 1 tbsp whole egg mayonnaise
  • 2 tbsp brown sugar
  • 1/4 tsp cayenne pepper


Instructions

  1. Preheat the broiler: Set your oven broiler or grill to high and position the oven shelf about 6 inches (15 cm) from the heat source to ensure optimal caramelization of the salmon and vegetables.
  2. Prepare the baking tray: Lightly spray or brush a baking tray with olive oil to prevent sticking and to promote even cooking of both the fish and vegetables.
  3. Prepare vegetables: Arrange the asparagus, broccolini, and cherry tomatoes on the baking tray. Drizzle the vegetables with olive oil, season with salt and pepper, and toss gently with your hands to coat them evenly. Spread the vegetables mostly in a single layer for uniform cooking.
  4. Arrange salmon fillets: Position the salmon fillets evenly wedged between the vegetables on the baking tray. Season both sides of the salmon with salt and pepper to taste.
  5. Make and apply glaze: In a small bowl, combine Dijon mustard, whole egg mayonnaise, brown sugar, and cayenne pepper to create the glaze. Generously slather the glaze on the tops and sides of each salmon fillet to add sweet and spicy flavor.
