Instructions
- Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery and sauté for about 5 minutes until softened, stirring occasionally to prevent sticking.
- Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, being careful not to let it burn.
- Add Potatoes and Broth: Add the cubed potatoes, vegetable broth, dried marjoram, dried thyme, smoked paprika, salt, and black pepper to the pot. Stir to combine all ingredients evenly.
- Simmer: Bring the soup to a boil, then reduce the heat to low and simmer covered for 20 to 25 minutes until the potatoes are tender when pierced with a fork.
- Thicken Soup: Use a potato masher or an immersion blender to mash some of the potatoes in the pot, creating a thicker and creamier texture while leaving some chunks for texture.
- Add Milk and Nutritional Yeast: Stir in the plant-based milk and nutritional yeast (if using), then simmer the soup for an additional 5 minutes to meld the flavors.
- Adjust Seasoning and Serve: Taste the soup and adjust the seasoning if needed. Ladle the hot soup into bowls, garnish with chopped fresh parsley, and serve immediately.
