Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the biscuits.
  2. Sauté Vegetables: In a skillet, heat olive oil or butter over medium heat. Add the finely chopped onion, celery, and carrot and cook for 4–5 minutes until they soften, then remove from heat and let them cool slightly.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, dried sage, dried thyme, and black pepper until evenly combined.
  4. Cut in Butter: Add the cold cubed butter to the dry mixture and use a pastry cutter or your fingers to incorporate it until the mixture looks like coarse crumbs.
  5. Add Vegetables and Parsley: Stir in the sautéed vegetables and chopped parsley until well mixed throughout the flour and butter mixture.
