Ingredients
Scale
Meat and Base
- 1.5 pounds Ground Beef (or ground turkey or plant-based meat)
- 0.5 cup Jasmine Rice (or cauliflower rice)
Vegetables
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 2 medium Carrots, diced
- 1 medium Cabbage, diced
- 1 can Diced Tomatoes (preferably low-sodium)
Liquids and Seasoning
- 1.5 cups Beef Broth (or vegetable/chicken broth)
- 1 teaspoon Oregano (or Italian seasoning)
- Salt, to taste
- Black Pepper, to taste
Instructions
- Preheat: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Brown Meat: In a skillet over medium heat, brown the ground beef for about 5-7 minutes until fully cooked and no longer pink.
- Sauté Vegetables: Add diced onion, diced carrots, and minced garlic to the skillet, cooking for an additional 3-4 minutes until softened and fragrant.
- Combine Ingredients: Transfer the meat and vegetable mixture to a large bowl. Stir in the jasmine rice, diced tomatoes, and oregano until evenly combined.
- Add Cabbage: Gently fold in the diced cabbage, mixing well to incorporate it evenly throughout the mixture.
- Assemble Casserole: Pour the mixture into a baking pan. Evenly pour 1.5 cups of beef broth over the top to provide moisture for baking.
- Cover and Bake: Cover the pan tightly with foil and bake in the preheated oven for 1 hour to allow flavors to meld and rice to cook through.
- Stir and Add Veggies: Remove the foil and gently stir the casserole. Add any additional vegetables at this point if desired.
- Bake Uncovered: Return the dish to the oven and bake uncovered for an additional 30-45 minutes, or until the cabbage is tender and the top is slightly browned.
- Rest and Serve: Let the casserole rest for 15 minutes before serving to allow it to set. Optionally, you can top with cheese if desired.
Notes
- Ground turkey or plant-based meat can be used as alternatives to ground beef for different dietary preferences.
- Cauliflower rice can be substituted for jasmine rice to reduce carbs.
- Use low-sodium broth and diced tomatoes to control sodium intake.
- Covering the casserole with foil initially helps prevent drying while allowing thorough cooking.
- Letting the casserole rest before serving enhances texture and flavor melding.
- Optional cheese topping adds extra richness and flavor but can be omitted for a dairy-free version.
