- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
Spices and Oil
- 1 teaspoon cumin
- Salt and pepper, to taste

- Sauté the vegetables: Add chopped onion, bell pepper, and minced garlic to the skillet. Cook for 3–4 minutes, stirring occasionally, until the vegetables soften and become fragrant.
- Add sweet potatoes and seasonings: Stir in the diced sweet potatoes along with cumin, salt, and pepper. Mix everything well to evenly distribute the flavors.
- Cover and cook: Cover the skillet with a lid and cook for 10–15 minutes, stirring occasionally, until the sweet potatoes are fork-tender and the ingredients are well combined.
- Serve: Remove the skillet from heat and serve the dish hot. Optionally garnish with chopped fresh herbs or a sprinkle of cheese for added flavor.
Notes
- You can substitute bell pepper with other vegetables like zucchini or carrots.
- For extra spice, add a pinch of chili powder or cayenne pepper.
- Leftovers store well in an airtight container in the fridge for up to 3 days.
- Use ground chicken or turkey sausage as a variation for the protein.
- Adding a handful of spinach at the end boosts nutrition and color.
