  • 1 tablespoon Dijon mustard
  • 1 tablespoon breadcrumbs

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare Filling: In a large bowl, combine the ground turkey, chopped dried cranberries, finely diced onion, fresh thyme, salt, black pepper, Dijon mustard, and breadcrumbs. Mix thoroughly until all ingredients are evenly incorporated.
  3. Prepare Puff Pastry: Lightly flour a clean surface and roll out the puff pastry sheet. Cut the sheet in half lengthwise to form two long strips for wrapping the filling.
  4. Fill and Roll: Divide the turkey filling evenly between the two pastry strips. Place the filling in a log shape down the center of each strip. Fold the puff pastry edges over the filling, sealing the seam with a little water. Press down along the seal with a fork to ensure it’s closed properly.
  5. Slice Rolls: Cut each filled roll into 6 equal pieces, yielding 12 sausage rolls in total. Place the rolls seam-side down on the prepared baking sheet for baking.
  6. Egg Wash and Optional Toppings: Brush the top of each sausage roll with the beaten egg to promote browning. Optionally, sprinkle poppy seeds or sesame seeds on top for added texture and flavor.
