Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease the tin well to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt until evenly combined.
- Combine Wet Ingredients: In a separate large bowl, whisk the melted unsalted butter with both granulated and brown sugars until the mixture is smooth. Add the eggs, whole milk, and vanilla extract and mix until fully combined.
- Incorporate Dry Ingredients: Gradually stir the dry ingredient mixture into the wet ingredients, mixing just until everything is combined to avoid overmixing which can make muffins tough.
- Fold in Chocolates: Gently fold in the semi-sweet and white chocolate chips evenly through the batter.
- Fill Muffin Cups: Spoon a portion of the batter into each muffin cup, filling about one-third full.
- Add Lava Center: Place one chocolate truffle or chocolate square in the center of each muffin cup on top of the batter.
- Top with Batter: Cover the truffle with additional batter until each muffin cup is about three-quarters full to ensure the lava center is sealed within the muffin.
- Bake: Bake for 15 to 17 minutes, or until the muffin tops are set but still slightly soft in the center. Avoid overbaking to maintain the molten lava center.
