Ingredients
Scale
Tomato Mixture
- ½ small red onion, finely chopped
- 8 medium tomatoes (about 500g), coarsely chopped and drained
- 2-3 garlic cloves, crushed
- 6-8 fresh basil leaves, finely chopped
- 30ml balsamic vinegar
- 60-80ml extra virgin olive oil
- Salt and freshly ground black pepper, to taste
Bread
- 1 baguette or ciabatta loaf, sliced
- Extra virgin olive oil (for brushing bread slices)
Instructions
- Prepare the Tomato Mixture: In a large bowl, combine the coarsely chopped and drained tomatoes, finely chopped red onion, crushed garlic cloves, and finely chopped fresh basil leaves, ensuring everything is well mixed.
- Season the Mixture: Drizzle the tomato mixture with 30ml balsamic vinegar and 60-80ml of extra virgin olive oil. Stir thoroughly to combine all the flavors evenly throughout the mixture.
- Let It Marinate: Season with salt and freshly ground black pepper to taste, then allow the mixture to sit for 10 to 15 minutes so the flavors meld beautifully.
- Preheat the Oven or Grill Pan: Set your oven to 375°F (190°C) if baking the bread or heat a grill pan over medium heat if grilling.
- Prepare the Bread Slices: Lightly brush both sides of the sliced baguette or ciabatta with extra virgin olive oil to ensure a crispy, golden finish once toasted.
- Toast the Bread: Place the bread slices in the oven and toast for 8 to 10 minutes, or grill each side on the grill pan for 1 to 2 minutes until the bread turns golden and crisp.
- Assemble the Bruschetta: Generously spoon the tomato and basil mixture on top of each toasted bread slice, spreading it evenly to cover the surface.
- Serve: Serve the bruschetta immediately, optionally garnished with extra fresh basil leaves for an added burst of flavor and color.
Notes
- Draining the tomatoes before mixing prevents the bread from becoming soggy.
- For extra flavor, you can rub the toasted bread slices with a cut garlic clove before topping with the tomato mixture.
- Use a ripe, flavorful tomato variety like Roma or vine-ripened tomatoes for best results.
- This dish is best enjoyed fresh to maintain the crunch of the bread and freshness of the tomatoes.
