- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) black beans, drained and rinsed
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) pinto beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, garlic, and red pepper, and sauté until the vegetables are softened. This should take about 5 minutes.
- Add the black beans, kidney beans, pinto beans, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper to the pot. Stir well to combine.
- Bring the chili to a simmer, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally. This will help the flavors meld together.
- Taste the chili and adjust the seasonings as needed. Add more salt and pepper if desired.
