  • 1/2 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/4 cup water

Sandwich

  • 4 slices sourdough or sandwich bread
  • 2 tablespoons butter, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup diced tomatoes (optional)
  • 2 tablespoons sliced jalapeños (optional)
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Cook the ground beef: In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat, then stir in taco seasoning and water. Simmer for 3–4 minutes until thickened. Remove from heat.
  2. Prepare the bread: Butter one side of each slice of bread. Place two slices, buttered side down, on a flat surface.
  3. Assemble the sandwiches: Layer a mix of shredded cheddar and Monterey Jack cheeses evenly on the bread. Spoon the taco meat mixture on top, then add optional diced tomatoes, jalapeños, and green onions for extra flavor.
  4. Top and press: Place the remaining two slices of bread on top, buttered side up, to complete the sandwich.
  5. Cook the sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
