Instructions

- Make the Truffle Dough: Add the softened cream cheese and vanilla extract to the cookie crumbs. Blend again until the mixture is fully combined and forms a cohesive dough-like consistency.
- Shape the Truffles: Line a large baking sheet with parchment paper. Using a small cookie scoop, scoop out the dough and roll each into smooth balls. Arrange the balls on the baking sheet, aiming for a total of about 22 truffles. Place the tray in the freezer and chill for at least 30 minutes or until the truffles are firm.
- Melt the Chocolate: While the truffles chill, melt the white chocolate wafers following the package instructions until smooth and fluid for dipping.
- Coat the Truffles: Using a fork, dip each chilled truffle ball into the melted white chocolate, ensuring it is completely covered. Let excess chocolate drip off before placing it back on the parchment-lined baking sheet. Add sprinkles immediately on top if desired, before the chocolate sets.
- Chill to Set: Transfer the coated truffles to the refrigerator and chill until the chocolate is fully set and firm.
