Description

Delightful Sugar Cookie Rice Krispies treats combine the classic crispy cereal with a buttery sugar cookie flavor and festive sprinkles. This quick and easy no-bake recipe makes a perfect sweet treat for holidays or any time you crave a fun, chewy snack.

Ingredients

Scale

Base Ingredients

  • ½ cup butter
  • ½ cup sugar cookie mix (dry mix from the pouch)
  • 1 bag marshmallows (10 ounces, approx. 40 large marshmallows)
  • 6 cups Rice Krispies Cereal

Add-ins and Toppings

  • â…“ cup mini marshmallows
  • 2 tbsp sprinkles (Christmas or other color)
  • Additional sprinkles for decorating

Instructions

  1. Prepare the Pan: Grease a 9″x13″ baking tray with cooking spray or line it with parchment paper to prevent sticking and allow easy removal of the treats.
  2. Melt Butter: Place a large pot over low heat and melt the ½ cup of butter gently to avoid burning.
  3. Add Sugar Cookie Mix: Stir in ½ cup of sugar cookie mix continuously and cook for 1 minute to blend the flavors well with the melted butter.
  4. Melt Marshmallows: Add the entire 10-ounce bag of large marshmallows; keep stirring continuously until they are fully melted and combined smoothly with the butter and sugar cookie mixture.
  5. Mix in Cereal: Remove the pot from heat. Gently fold in 6 cups of Rice Krispies Cereal using a spatula or wooden spoon. Spray your mixing utensil with cooking spray beforehand to reduce sticking.
  6. Add Mini Marshmallows and Sprinkles: Immediately fold in â…“ cup mini marshmallows and 2 tablespoons of sprinkles. Some mini marshmallows will melt slightly, adding texture and sweetness.
  7. Press Mixture Evenly: Transfer the mixture to the prepared pan and gently spread it out into an even layer. Avoid pressing too hard; press just enough to hold the mixture together for neatly cut bars.
  8. Decorate: Sprinkle additional sprinkles on top for a festive, colorful finish.
  9. Cool and Serve: Allow the treats to cool for about 30 minutes until set, then cut into 18 to 24 squares. Serve and enjoy your sweet, crispy sugar cookie Rice Krispies treats!

Notes

  • Use cooking spray on your spatula to reduce sticking when mixing the cereal into the marshmallow mixture.
  • Do not over-press the mixture in the pan to keep the treats light and crispy rather than compacted.
  • For best results, consume within 2-3 days for maximum freshness and crunch.
  • You can substitute the sprinkles with chocolate chips or nuts for variation.
