Strawberry Syrup Puree

  • 1½ cups Strawberries (fresh or frozen, chopped)
  • 1 cup Water
  • ¼ cup Maple Syrup (can omit to keep sugar-free or substitute with honey or coconut sugar)

Sparkler Drink

  • Sparkling Water, chilled (about 1 cup per serving)
  • Fresh Lemon Juice, to taste (approximately 1 tablespoon per serving)
  • Prepared Strawberry Syrup Puree (from above)


Instructions

  1. Prepare Berry Ice Cubes: Chop the fresh strawberries and cut the blueberries in half. Place them evenly into the compartments of an ice cube tray, then fill each compartment with water. Freeze until the cubes are completely solid, typically for several hours or overnight.
  2. Make Strawberry Syrup Puree: In a medium saucepan, combine the chopped strawberries, water, and maple syrup. Simmer over medium heat until the strawberries become very soft and release their juices, about 10-15 minutes. Remove from heat and let cool slightly before blending into a smooth, thick syrup. Transfer to a container and refrigerate until chilled.
  3. Assemble Strawberry Sparkler Drink: In each serving glass, add a few strawberry fruit ice cubes, then pour in 2-3 tablespoons of the chilled strawberry syrup puree.
