Instructions
- Prepare Strawberries: In a bowl, combine the chopped strawberries with granulated sugar and lemon juice. Stir well and let sit for 10–15 minutes to macerate, allowing the strawberries to soften and release their natural juices.
- Make Whipped Cream: In a separate chilled bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form. Keep it chilled until ready to assemble the parfaits.
- Assemble Parfaits: In serving glasses, layer cubes of pound cake, a spoonful of the macerated strawberries along with their juice, and a dollop of whipped cream. Repeat these layers until the glasses are filled, finishing with a top layer of whipped cream and a few strawberry slices for garnish.
- Serve or Chill: Serve the parfaits immediately for the best texture, or cover and chill them for up to 2 hours to allow flavors to meld before serving.
