Ingredients
Scale
Blondie Batter
- 1 cup unsalted butter, at room temperature
- 3/4 cup sugar
- 1 large egg
- 1/4 cup fresh squeezed lemon juice
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup diced fresh strawberries
Strawberry-Lemon Glaze
- 1 cup powdered sugar, sifted
- 1 Tbsp strawberry puree (about 2 large strawberries)
- Lemon juice, as needed to thin the glaze
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to ensure it’s at the right temperature when the batter is ready.
- Prepare the pan: Line a 9-inch square baking pan with parchment paper to prevent sticking and make removal easy.
- Cream butter and sugar: Using a mixer, beat the unsalted butter and sugar together until the mixture is light and fluffy, which usually takes about 3-5 minutes.
- Add the egg: Beat in the large egg thoroughly until fully incorporated into the creamed mixture.
- Incorporate lemon juice: Mix in the fresh squeezed lemon juice until the batter is smooth and evenly combined.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to ensure even distribution of leavening agents.
- Mix dry with wet ingredients: Gradually add the flour mixture to the wet ingredients, mixing gently until just combined without overmixing.
- Fold in strawberries: Carefully fold in the diced fresh strawberries to evenly distribute them throughout the batter.
- Bake the batter: Spread the batter evenly into the prepared pan and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the glaze: While the blondies bake, trim and puree about 2 large strawberries to create the strawberry puree. In a bowl, whisk the powdered sugar together with the strawberry puree and add lemon juice gradually to achieve a smooth, spreadable glaze.
- Glaze the blondies: Once blondies have cooled completely, spread the strawberry-lemon glaze evenly over the top.
- Set and serve: Allow the glaze to set before slicing the blondies into 12 servings and serving.
Notes
- Use fresh, ripe strawberries for the best flavor in both the batter and glaze.
- Ensure the butter is at room temperature to make creaming easier.
- Do not overmix the batter once the flour is added to keep the blondies tender.
- Allow the blondies to cool completely before glazing to prevent the glaze from melting.
- You can substitute lemon juice with lemon zest for a more intense lemon flavor in the batter.
