Description

Strawberry Crunch Cheesecake Tacos are a fun and delicious dessert that combine crispy cinnamon-sugar coated flour tortillas shaped like taco shells with a creamy no-bake cheesecake filling, fresh diced strawberries, and a crunchy strawberry-flavored Oreo topping. Perfect for summer or any festive occasion, these tacos blend creamy, fruity, and crunchy textures for a delightful treat everyone will love.

Ingredients

Scale

For the Taco Shells:

  • 6 small flour tortillas
  • 2 tablespoons melted butter
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Cheesecake Filling:

  • 1 (8 oz) package cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For the Strawberry Crunch Topping:

  • 1 cup Golden Oreos, crushed
  • 2 tablespoons strawberry gelatin powder (dry)
  • 2 tablespoons melted butter

For the Strawberry Filling:

  • 1 cup fresh strawberries, diced
  • 1 tablespoon sugar (optional)

Instructions

  1. Prepare Taco Shells: Preheat the oven to 400°F. Brush each tortilla with melted butter on both sides. Mix cinnamon and sugar in a small bowl, then coat both sides of each tortilla with this mixture. Drape the tortillas over two rungs of the oven rack to form taco shapes and bake for 6 to 8 minutes or until golden and crispy. Remove and let cool completely.
  2. Make Strawberry Crunch: In a bowl, combine crushed Golden Oreos, strawberry gelatin powder, and melted butter. Mix until the mixture resembles coarse crumbs. Set aside for assembly.
  3. Prepare Cheesecake Filling: Beat the softened cream cheese in a mixing bowl until smooth. Add powdered sugar and vanilla extract and continue beating until creamy. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture until well combined.
  4. Prepare Strawberry Filling: Toss the diced strawberries with optional sugar in a small bowl to macerate lightly and bring out sweetness.
  5. Assemble Tacos: Spoon or pipe the cheesecake filling into each cooled taco shell. Top with a generous amount of the diced strawberries. Finally, sprinkle the strawberry crunch topping generously over the strawberries. Serve immediately for best texture and flavor.

Notes

  • Prepare taco shells ahead of time and store in an airtight container to maintain crispiness.
  • Use whipped topping instead of heavy cream for a quicker cheesecake filling.
  • Try swapping strawberries for blueberries or peaches to create flavor variations.
