Description

These Strawberry Cheesecake Truffle Balls are a delightful no-bake dessert combining the tangy creaminess of cheesecake with the sweet, vibrant flavor of freeze-dried strawberries. Rolled in graham cracker crumbs or additional strawberry powder, and optionally dipped in white chocolate, these bite-sized treats are perfect for parties, snacks, or anytime indulgence.

Ingredients

Scale

Base Mixture

  • 1 cup freeze-dried strawberries, crushed into powder
  • 8 oz cream cheese, softened
  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Optional Coating

  • 1/2 cup white chocolate chips (for dipping)
  • Additional crushed freeze-dried strawberries or graham cracker crumbs for coating

Instructions

  1. Mix the ingredients: In a large bowl, thoroughly combine the softened cream cheese, crushed freeze-dried strawberries, graham cracker crumbs, powdered sugar, and vanilla extract until the mixture is smooth and fully integrated.
  2. Chill the mixture: Cover the bowl and place it in the refrigerator for 30–60 minutes to firm up the mixture, making it easier to shape into balls.
  3. Form the truffle balls: Use a small cookie scoop or spoon to portion out the mixture into approximately 1-inch diameter balls, placing them on a parchment-lined tray to prevent sticking.
  4. Melt the white chocolate (optional): If using, melt the white chocolate chips in a microwave-safe bowl by heating in 20-second intervals, stirring between each until smooth and fully melted.
  5. Dip and coat the truffles: Dip each truffle ball halfway or fully into the melted white chocolate, then immediately roll them in extra crushed freeze-dried strawberries or graham cracker crumbs to add texture and flavor.
  6. Final chilling: Transfer the coated truffles back to the parchment-lined tray and refrigerate for an additional 15–20 minutes until the chocolate coating is set and the truffles are firm.
  7. Serve: Enjoy the truffle balls chilled for the best texture and flavor.

Notes

  • Store these truffles in an airtight container in the refrigerator for up to 5 days to maintain freshness.
  • They can be frozen for longer storage and thawed in the refrigerator before serving.
  • For variety, swap white chocolate for dark or milk chocolate according to your preference.
