Sour Melon Base

  • 1 medium ripe honeydew melon, cubed
  • 2 limes, zested
  • 2/3 cup fresh lime juice (about 4 medium limes)
  • 1/2 cup loosely packed fresh mint leaves

To Assemble Spritzer

  • Sparkling water or club soda, as needed
  • Ice cubes
  • Lime wedges, for garnish
  • Honeydew melon balls, for garnish
  • Fresh mint sprigs, for garnish


Instructions

  1. Blend the sour melon base: In a blender, combine the cubed honeydew melon, lime zest, lime juice, and fresh mint leaves. Blend on medium-high speed for about 2 minutes until the mixture becomes smooth and frothy.
  2. Strain and store: Pour the blended mixture through a fine mesh sieve or nut milk bag into a bowl to remove pulp and achieve a smooth concentrate. Transfer the strained sour melon base into a jar and refrigerate until ready to use.
  3. Make the spritzer: When ready to serve, fill a glass halfway with ice and garnish with lime wedges, honeydew melon balls, and mint sprigs. Pour 1/2 cup of the sour melon base over the ice, then top with 1/2 cup of sparkling water or club soda. Stir gently to combine and enjoy this refreshing beverage.
