Instructions
- Boil Potatoes: Place potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 15–20 minutes, or until the potatoes are fork-tender.
- Drain and Warm: Drain the potatoes thoroughly and return them to the warm pot to evaporate excess moisture and keep warm.
- Add Dairy and Mash: Add butter, milk, and sour cream to the warm potatoes. Mash the mixture using a potato masher or fork until smooth and creamy. Add additional milk if needed to reach desired consistency.
- Incorporate Cheese: Stir in the shredded smoked Gouda cheese until it melts completely and combines evenly with the mashed potatoes, adding a rich, smoky flavor.
- Season: Taste and season with salt and freshly ground black pepper according to preference.
