Ingredients
Scale
Meat and Seasoning
- 1 lb ground beef
- 2 tablespoons taco seasoning
Vegetables
- 1 cup diced onions
- 1/2 cup sliced jalapeños
- 1 cup diced tomatoes (for serving or garnish)
Dairy
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Carbs
- 4 flour tortillas
Others
- Cooking oil (for skillet)
- Salsa (for serving)
Instructions
- Heat the skillet: Pour a small amount of cooking oil into a skillet and heat it over medium-high heat until shimmering but not smoking.
- Cook the ground beef: Add the ground beef to the skillet. Use a spatula to break it up and cook until browned and no longer pink, about 5-7 minutes.
- Add seasoning and veggies: Stir in the taco seasoning, diced onions, and sliced jalapeños. Cook for another 2-3 minutes until the onions soften and the flavors meld together.
- Assemble the quesadillas: Place one flour tortilla in the skillet over medium heat. Evenly spread a portion of the beef mixture on top, then sprinkle with shredded cheese.
- Top and cook: Place a second tortilla over the filling. Cook until the bottom tortilla turns golden brown and crispy, about 3-4 minutes, then carefully flip and cook the other side until golden and the cheese is melted.
- Repeat: Remove the cooked quesadilla and repeat the assembly and cooking steps with the remaining tortillas and beef mixture.
- Serve: Slice each quesadilla into wedges and serve hot with diced tomatoes and your favorite salsa on the side for added freshness and zing.
Notes
- You can substitute ground beef with ground turkey or chicken for a lighter version.
- To reduce heat, remove seeds from the jalapeños or substitute with mild peppers.
- For extra creaminess, add a dollop of sour cream or guacamole when serving.
- Use a non-stick skillet or lightly oil the pan to prevent sticking and ensure crisp quesadillas.
- Leftover quesadillas reheat well in a skillet or air fryer to maintain crispiness.
