Description

This Slow Cooker Pulled BBQ Chicken recipe features tender, flavorful chicken breasts slow-cooked in a sweet and smoky barbecue sauce blend. Perfect for easy sandwiches, wraps, or salads, this dish offers a convenient and delicious meal with minimal prep time and maximum taste.

Ingredients

Scale

Chicken

  • 3 boneless skinless chicken breasts

Sauce

  • 1 (18-oz) bottle Sweet Baby Ray’s Hickory & Brown Sugar Barbecue Sauce
  • 1/3 cup light brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp chipotle chili powder
  • 1/4 tsp ground white pepper

Optional

  • Slow cooker liner (optional)

Instructions

  1. Prepare the Chicken: Place the fully thawed boneless skinless chicken breasts into the slow cooker. Ensure that the chicken is completely thawed to promote even cooking.
  2. Make the BBQ Sauce Mixture: In a separate bowl, whisk together the barbecue sauce, light brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, smoked paprika, chipotle chili powder, and ground white pepper until everything is well combined.
  3. Coat the Chicken: Pour the prepared BBQ sauce mixture evenly over the chicken breasts in the slow cooker, making sure each piece is fully coated for maximum flavor.
  4. Cook the Chicken: Cover the slow cooker and cook on low heat for 6 to 7 hours, or alternatively on high heat for 3 to 4 hours, until the chicken is tender and easy to shred.
  5. Shred and Mix: Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir the shredded chicken thoroughly into the sauce to fully coat it.
  6. Serve: Serve the pulled BBQ chicken on toasted, buttered buns for a classic sandwich experience, or use it as a filling for wraps, salads, or tacos to enjoy different meal variations.

Notes

  • Make sure chicken is fully thawed before cooking to ensure even and safe cooking.
  • Using a slow cooker liner can save cleanup time but is optional.
  • Adjust the level of chipotle chili powder to control the spiciness based on your preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a slightly thicker sauce, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
