Description
This Sloppy Joe Cornbread Casserole combines the classic flavors of sloppy joe with a sweet and savory cornbread topping, baked together to create a hearty and comforting meal that’s perfect for a quick weeknight dinner or casual family gathering.
Ingredients
Scale
For the Cornbread Batter
- 2 (17 oz) boxes Jiffy Corn Muffin Mix
- 2 large eggs
- â…” cup milk
For the Sloppy Joe Filling
- 1 lb ground beef
- 1 (15 oz) can Manwich Sloppy Joe Sauce
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C) and grease a 9×13 inch baking dish to prevent sticking and ensure easy serving.
- Make Cornbread Batter: In a large bowl, combine the corn muffin mix, eggs, and milk. Stir well until all ingredients are blended smoothly and set aside while preparing the filling.
- Make Sloppy Joe Filling: Heat a skillet over medium heat and brown the ground beef, breaking it up as it cooks. Once cooked through, drain the excess grease. Add the Manwich Sloppy Joe sauce to the beef, stir to combine, and let it simmer for 5 minutes to blend the flavors.
- Assemble Casserole: Spread the sloppy joe mixture evenly in the prepared baking dish. Carefully layer the cornbread batter on top, spreading it to cover the beef mixture completely.
- Bake: Place the casserole in the preheated oven and bake for about 20 minutes or until the cornbread topping turns golden brown and a toothpick inserted in the center comes out clean. Remove from oven and let it cool slightly before serving.
Notes
- You can substitute the Manwich sauce with homemade sloppy joe sauce for a fresher taste.
- For extra cheesy flavor, sprinkle shredded cheddar cheese on top of the cornbread batter before baking.
- Make sure to drain the cooked beef well to avoid excess grease in the casserole.
- This casserole can be refrigerated and reheated, making it perfect for meal prep.
