Description

Pasta and Shrimp

  • 12 ounces pasta (such as penne or linguine)
  • 1 pound large shrimp, peeled and deveined

Sauce and Seasoning

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese

  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese


Instructions

  1. Preheat and Cook Pasta: Preheat your oven to 375°F. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain the pasta and set it aside.
  2. Sauté Shrimp and Garlic: In a large skillet, melt the butter with olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant. Add the shrimp, season with salt and pepper, and cook each side for 2 to 3 minutes until the shrimp turn pink. Remove the shrimp from the skillet and set aside.
  3. Make Sauce and Combine Pasta: Pour the white wine and lemon juice into the skillet, simmer for 2 to 3 minutes to reduce slightly. Return the cooked pasta to the skillet along with chopped parsley and half of the grated Parmesan cheese. Toss everything together to coat the pasta in the flavorful sauce. Stir in half the shredded mozzarella cheese.
  4. Assemble and Bake: Grease a 9×13-inch baking dish and transfer the pasta mixture into it. Arrange the cooked shrimp on top, then sprinkle the remaining Parmesan and mozzarella cheeses evenly over the pasta and shrimp.
  5. Bake Until Golden: Place the baking dish in the preheated oven and bake for 15 to 20 minutes until the cheese is melted, bubbly, and lightly golden. Garnish with extra parsley before serving warm.

  • Substitute chicken or vegetable broth for white wine if preferred.
  • Add spinach or cherry tomatoes into the pasta mix for added flavor and color.
  • For a creamier texture, stir in a few tablespoons of heavy cream before baking.
