Shrimp and Seasoning
- 1 pound large shrimp (peeled and deveined)
- Salt and black pepper to taste
- Juice of ½ lemon
- 2 tablespoons chopped parsley
Rice and Vegetables
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic (minced)
- 1 small onion (diced)
- 1 cup long-grain rice (uncooked)
- 2 cups chicken or vegetable broth
- ½ teaspoon paprika
- ¼ teaspoon chili flakes (optional)
- 1 cup frozen peas or mixed vegetables
Instructions
- Sauté Aromatics: In a large skillet or sauté pan, heat olive oil and butter over medium heat. Add the minced garlic and diced onion, sautéing for 2–3 minutes until softened and fragrant.
- Toast Rice and Simmer: Stir in the uncooked long-grain rice and cook for 1–2 minutes to lightly toast it. Add chicken or vegetable broth, paprika, chili flakes if using, salt, and pepper. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes until the rice is tender and all the liquid is absorbed.
- Cook Shrimp: Meanwhile, season the shrimp with salt and pepper. In a separate pan, sauté shrimp over medium-high heat for 2–3 minutes on each side until they turn pink and are cooked through. Remove from heat and set aside.
- Combine and Heat Vegetables: Once the rice is done, stir in the frozen peas or mixed vegetables and let them warm through for 2–3 minutes, covered.
- Finish the Dish: Gently fold the cooked shrimp into the rice and vegetables mixture. Add the lemon juice for brightness and top with chopped parsley. Serve warm.

- For extra flavor, add a splash of white wine before simmering the rice.
- Finish the dish with grated Parmesan cheese for a richer taste.
- You can use pre-cooked shrimp; just stir them in at the end to warm through without overcooking.
