Description

Savory Spam Burnt Ends are a delicious, budget-friendly twist on traditional burnt ends, featuring smoky, sweet, and tangy flavors. This recipe uses low sodium Spam smoked to perfection with a sweet and smoky rub, then glazed with a homemade BBQ sauce mixture for an irresistible appetizer or snack that’s easy to prepare and perfect for gatherings.

Ingredients

Scale

Spam and Rub

  • 4 cans Low Sodium Spam (12 ounces each)
  • 0.25 cups Sweet and Smoky Rub (or your favorite BBQ rub)

BBQ Sauce Glaze

  • 2 cups BBQ Sauce (store-bought or homemade)
  • 3 tablespoons Honey (or maple syrup)
  • 3 tablespoons Brown Sugar (or coconut sugar)

Instructions

  1. Preheat Smoker: Preheat your smoker to 250°F to ensure a steady, moderate heat for smoking the Spam cubes.
  2. Prepare Spam Cubes: Cut each can of Spam into 1-inch cubes. Place them in a foil pan and sprinkle with the sweet and smoky rub, tossing until every piece is evenly coated with the seasoning.
  3. First Smoke: Arrange the Spam cubes on a wire rack, making sure they are not touching each other to allow smoke circulation. Smoke for 1 hour to develop a smoky flavor and start caramelizing the edges.
  4. Make BBQ Glaze: While the Spam smokes, combine the BBQ sauce, honey, and brown sugar in a bowl, mixing well to create a sweet and tangy glaze.
  5. Glaze Spam: Transfer the smoked Spam cubes back to the foil pan, pour the BBQ glaze over them, and gently toss to coat all the cubes thoroughly.
  6. Second Smoke: Smoke the glazed Spam for another hour in the foil pan, allowing the sauce to thicken and caramelize into a sticky, flavorful coating.

Notes

  • Use low sodium Spam to control the saltiness in the dish.
  • Feel free to substitute honey with maple syrup for a different sweetness profile.
  • Coconut sugar can be used instead of brown sugar for a healthier alternative.
  • Maintain consistent smoker temperature for even cooking.
  • Ensure Spam cubes are arranged with space between them during the first smoke for optimal smoke penetration.
  • These burnt ends are best served warm as an appetizer or side dish.
