Description

A hearty and flavorful casserole featuring smoked sausage, baby red potatoes, and fresh green beans, seasoned with garlic, smoked paprika, and herbs, all baked to perfection and optionally topped with melted cheddar cheese.

Ingredients

Scale

Main Ingredients

  • 1 pound smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 pound baby red potatoes, quartered
  • 1 pound fresh green beans, trimmed and halved
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Seasonings and Others

  • 1/4 cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the casserole.
  2. Prepare Ingredients: In a large mixing bowl, combine the sliced sausage, quartered potatoes, green beans, and sliced onion. Add the minced garlic, olive oil, smoked paprika, dried thyme, dried rosemary, salt, and pepper. Toss everything together until the ingredients are evenly coated with the oil and seasonings.
  3. Assemble Casserole: Transfer the mixture into a large baking dish or casserole dish and spread it out evenly to ensure even cooking.
  4. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes to start cooking the potatoes and sausage thoroughly.
  5. Bake Uncovered: Remove the foil after 30 minutes, stir the ingredients gently, and continue baking uncovered for an additional 15-20 minutes until the potatoes are tender and the sausage is nicely browned.
  6. Optional Cheese Topping: If you’re using cheddar cheese, sprinkle it evenly over the casserole during the last 5 minutes of baking. Allow the cheese to melt and become bubbly.
  7. Serve: Remove the casserole from the oven and let it cool slightly before serving to ensure the flavors meld and it’s safe to eat.

Notes

  • You can substitute smoked sausage with kielbasa or any cured sausage for similar flavors.
  • Feel free to add other vegetables like bell peppers or carrots for extra nutrition and color.
  • For a spicier version, add a pinch of cayenne pepper along with the paprika.
  • If you prefer, you can use frozen green beans; just thaw and drain them before using.
  • The casserole can be prepared a few hours ahead and refrigerated; just extend the baking time slightly if baking from cold.
