Instructions

  1. Heat the oil: Heat 1 tablespoon of olive oil in a large skillet over medium heat until shimmering but not smoking, preparing the pan for cooking sausage.
  2. Cook the sausage: Add the sliced andouille sausage to the skillet and cook, turning occasionally, until browned on all sides, about 5 to 6 minutes. This develops flavor and a slight crispness. Remove the sausage from the skillet and set aside.
  3. Prepare the vegetables: Increase the heat to medium-high and add the remaining 1 tablespoon of olive oil to the skillet.
