Rotel Dip is a warm, cheesy, and savory appetizer featuring ground beef, taco seasoning, spicy Rotel tomatoes, and creamy Velveeta cheese. Perfect for parties or casual gatherings, this dip is simple to make and pairs wonderfully with tortilla chips or toasted bread.

Meat and Seasoning
- 1 lb ground beef (lean, medium, or extra lean)
- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
Tomatoes and Cheese
- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)
Garnish
- Diced tomatoes (optional, reserve 1 tbsp from the can)
- Fresh parsley or cilantro (chopped, optional)
- Green onions (chopped, optional)
Instructions
- Cook the ground beef: Heat a large skillet or frying pan over medium heat. Add the ground beef and break it apart using a wooden spoon. Cook until there is no pink remaining and the beef is fully cooked, about 5 minutes. Drain any excess fat from the pan.
- Add seasoning and tomatoes: Reduce the heat to medium and stir in the taco seasoning and the entire can of Rotel with its juices. Cook for 2 to 3 minutes until the mixture is well combined and begins to simmer. Optionally, save 1 tablespoon of diced tomatoes for garnish.
- Melt the cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously until all the cheese has melted and the dip has a smooth, creamy consistency.
- Garnish and serve: Optionally, top the dip with reserved diced tomatoes, chopped fresh parsley or cilantro, and sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguette slices for dipping.
Notes
- Use lean ground beef to reduce fat content if desired.
- For a spicier dip, use Rotel with extra hot chilies.
- If Velveeta cheese is unavailable, processed cheese alternatives can be used but may alter the texture.
- For a vegetarian version, substitute ground beef with cooked crumbled tofu or a plant-based ground meat alternative and ensure cheese and seasoning are vegetarian-friendly.
- Serve the dip hot for the best creamy texture; reheat gently if needed.
