This Rotel Dip is a creamy, cheesy, and flavorful appetizer perfect for game days, parties, or casual gatherings. Made with ground beef, taco seasoning, spicy diced tomatoes, and Velveeta cheese, this dip comes together quickly on the stovetop and is best served warm with tortilla chips or toasted bread.

Meat and Seasoning
- 1 lb ground beef (lean, medium, or extra lean)
- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
Cheese and Tomatoes
- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)
Optional Garnishes
- Diced tomatoes (reserved from Rotel)
- Freshly chopped parsley or cilantro
- Chopped green onions
Instructions
- Cook the ground beef: Heat a large skillet or frying pan over medium heat. Add 1 lb ground beef and break it apart with a wooden spoon. Cook for approximately 5 minutes until no pink remains and the meat is fully cooked. Drain any excess fat.
- Add seasoning and tomatoes: Reduce the heat to medium and stir in 1 tbsp taco seasoning along with 1 can Rotel (including juices). Cook for 2-3 minutes until everything is fully combined and the sauce is gently simmering. Optionally, reserve 1 tablespoon of diced tomatoes for garnish.
- Melt the cheese: Add the cubed 16 ounces Velveeta cheese to the skillet. Stir continuously until the cheese is fully melted and the dip becomes smooth and creamy.
- Garnish and serve: Optionally, garnish the dip with reserved diced tomatoes, freshly chopped parsley or cilantro, and sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguette slices for dipping and enjoying.
Notes
- You can adjust the spice level by choosing mild or spicy Rotel or adding extra chili powder to the seasoning.
- Ground turkey or chicken can be used instead of beef for a leaner option.
- Velveeta cheese melts smoothly for the best creamy texture, but you may substitute with a combination of processed cheeses if desired.
- Serve the dip warm and fresh for best flavor and consistency.
