Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the optimal roasting temperature for perfectly cooked potatoes and feta.
- Prepare the potatoes: Place the halved baby potatoes on a baking sheet, drizzle them generously with olive oil, then evenly sprinkle dried oregano, paprika, salt, and pepper. Toss everything to coat the potatoes thoroughly with the oil and seasonings.
- Add feta and garlic: Create a space in the center of the baking sheet and place the block of feta cheese there. Arrange the smashed garlic cloves around the potatoes to infuse flavor as they roast.
- Roast: Place the baking sheet in the preheated oven and roast for 35-40 minutes, or until the potatoes are golden and crispy and the feta has softened and developed a slight golden hue.
- Combine: Remove from the oven carefully. Using a spoon, break up the softened feta cheese and toss it together with the roasted potatoes and garlic, allowing the warm feta to melt throughout and coat the potatoes.
- Garnish and serve: Optionally sprinkle fresh parsley over the dish for a pop of color and freshness, then serve warm for the best flavor experience.
