  • 1 teaspoon paprika
  • Salt and pepper to taste

Garnish

  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the optimal roasting temperature for perfectly cooked potatoes and feta.
  2. Prepare the potatoes: Place the halved baby potatoes on a baking sheet, drizzle them generously with olive oil, then evenly sprinkle dried oregano, paprika, salt, and pepper. Toss everything to coat the potatoes thoroughly with the oil and seasonings.
  3. Add feta and garlic: Create a space in the center of the baking sheet and place the block of feta cheese there. Arrange the smashed garlic cloves around the potatoes to infuse flavor as they roast.
  4. Roast: Place the baking sheet in the preheated oven and roast for 35-40 minutes, or until the potatoes are golden and crispy and the feta has softened and developed a slight golden hue.
