- Heat the Oven: Set your oven rack to the lowest position and preheat the oven to 450ºF (232ºC). Placing the rack low allows for direct heat contact that helps the mushrooms develop a rich caramelization by evaporating moisture quickly.
- Prepare the Mushrooms: Rinse mushrooms gently and dry them thoroughly. Trim the stems. For uniform cooking, leave small mushrooms (1 to 1½ inches) whole, halve medium-sized mushrooms (1½ to 2 inches), and quarter any mushrooms larger than 2 inches.
- Season the Mushrooms: In a large bowl, toss the prepared mushrooms with olive oil, kosher salt, and black pepper. Spread them evenly on a large rimmed baking sheet in a single layer, which promotes browning instead of steaming.
- Initial Roasting: Roast the mushrooms for 25 to 30 minutes until their liquid fully evaporates. Remove the baking sheet and gently stir the mushrooms with a spatula. This step intensifies flavor and improves texture by reducing moisture.
