Ingredients
Scale
Roasted Grapes
- 1 cup seedless red or black grapes
- 1 teaspoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional)
Toasts and Toppings
- 4 slices rustic bread (sourdough or baguette)
- ¾ cup whole milk ricotta cheese
- 1–2 teaspoons honey
- Chopped toasted walnuts or almonds (optional)
- Fresh thyme or mint for garnish
Instructions
- Preheat Oven and Prepare Grapes: Preheat your oven to 400°F (200°C). Toss the grapes in a bowl with olive oil, salt, pepper, and fresh thyme leaves if using. Spread them out evenly on a baking sheet.
- Roast Grapes: Place the baking sheet in the preheated oven and roast the grapes for 15–20 minutes until they are soft and slightly blistered, which brings out their natural sweetness and creates a lovely caramelized flavor.
- Toast the Bread: While the grapes roast, toast the bread slices until golden and crisp to provide a sturdy and crunchy base for the toppings.
- Assemble Toasts: Spread a generous spoonful of ricotta cheese onto each toasted bread slice. Then, top with the warm roasted grapes.
- Finish and Serve: Drizzle each toast with honey and sprinkle chopped nuts or fresh herbs such as thyme or mint over the top if desired. Serve immediately to enjoy the contrast of warm roasted grapes and creamy ricotta.
Notes
- For extra flavor, mix a pinch of lemon zest or a small amount of honey into the ricotta before spreading it on the toasts.
- These toasts are best enjoyed warm but can also be served at room temperature.
- If you prefer, substitute fresh thyme with other herbs like rosemary or basil depending on your taste.
