  • 1 Tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp garlic powder
  • 1/8 tsp freshly cracked black pepper


Instructions

  1. Preheat and Prepare Squash: Preheat your oven to 400ºF (204ºC). Cut off both ends of the delicata squash, then slice it lengthwise to open it up.
  2. Clean and Slice: Use a spoon to carefully scrape out all the seeds and stringy pulp from the inside of each half. Next, slice each half into ½-inch wide slices to ensure even roasting.
  3. Season the Squash: Arrange the sliced squash on a baking sheet lined with parchment paper for easy cleanup. Drizzle the olive oil over the slices, then sprinkle evenly with salt, garlic powder, and freshly cracked black pepper.
